Collagen, Raspberry & Dark Chocolate Truffles

Heavenly yet devilishly moreish, these truffles are a treat for the soul and body. Chocolate is one of my favourite nourishing ingredients. It’s high in mood boosting Magnesium and Tryptophan, the feel good serotonin producing amino acid; not to mention antioxidants too. And married with Collagen Super Powder with subtle notes of raspberries it’s a match made in heaven that’ll leave you reaching for more.

Ingredients


Chocolate filling:

  • 160ml coconut cream, warmed

  • 200g low sugar dark chocolate, melted

  • 1 tbsp coconut oil

  • 2 tbsp freeze dried raspberries (optional)

  • 2 scoops Collagen Super Powder (the raspberry flavour comes from this product, so alternative brands may not achieve the same flavour)

  • 1 tbsp maple syrup (optional - you can switch this out for inulin syrup for a low sugar alternative)


Chocolate coating:


  • 100g dark chocolate, melted

  • 1 tsp coconut oil


Method


  1. Whisk all filling ingredients together and allow to set in the fridge for 2 hours or overnight.

  2. Using a cookie scoop roll into balls and allow to set on parchment paper in the fridge for 30 mins. Tip: dip the scoop in warm water to help it glide between each ball.

  3. Next combine coating ingredients together in a separate bowl.

  4. Drop chocolate balls into the mix until coated and set aside on a tray with parchment paper.

  5. Immediately sprinkle freeze dried raspberries on top.

  6. Allow to set in the fridge for 30 mins.
