Heavenly yet devilishly moreish, these truffles are a treat for the soul and body. Chocolate is one of my favourite nourishing ingredients. It’s high in mood boosting Magnesium and Tryptophan, the feel good serotonin producing amino acid; not to mention antioxidants too. And married with Collagen Super Powder with subtle notes of raspberries it’s a match made in heaven that’ll leave you reaching for more.
Prep Time: overnight
160ml coconut cream, warmed
200g low sugar dark chocolate, melted
1 tbsp coconut oil
2 tbsp freeze dried raspberries (optional)
2 scoops Collagen Super Powder (the raspberry flavour comes from this product, so alternative brands may not achieve the same flavour)
1 tbsp maple syrup (optional - you can switch this out for inulin syrup for a low sugar alternative)
100g dark chocolate, melted
1 tsp coconut oil
Whisk all filling ingredients together and allow to set in the fridge for 2 hours or overnight.
Using a cookie scoop roll into balls and allow to set on parchment paper in the fridge for 30 mins. Tip: dip the scoop in warm water to help it glide between each ball.
Next combine coating ingredients together in a separate bowl.
Drop chocolate balls into the mix until coated and set aside on a tray with parchment paper.
Immediately sprinkle freeze dried raspberries on top.
Allow to set in the fridge for 30 mins.
