This nourishing drink has all the heat and tropical flavours of summer. It's fruity, it's spicy and will take you back to white sands, warmer skies and the gentle breeze of utter paradise. Light notes of citrus merge with the deep and earthy flavours of ginger, held together with creamy coconut and pineapple milk. With a splash of sparkling CanoO Water it's perfectly crisp and refreshing too. Ingredients
500g fresh ginger, peeled
2 cinnamon sticks
1/4 tsp clove powder
600ml water
Sparkling CanO Water
1 lemon/lime
1 can coconut milk
1 tsp turmeric
400ml pineapple juice
Maple syrup (optional)
Ice
Method
Grate the ginger in a food processor.
Add to pot of boiling water with the cinnamon and clove. Allow to simmer for 30 minutes.
Meanwhile, blend the coconut milk, pineapple juice and turmeric together and store in an airtight container in the fridge.
Strain the ginger mix into an airtight container and allow to cool. At room temperature store in the fridge.
When ready to serve, add ice to your glass mule. Pour 1/3 cup with your ginger beer. Add the maple syrup. Follow with the coconut & pineapple milk until it reaches half the glass. Squeeze in half a lemon or lime and finish with a dash of sparkling water.
